Doughboy

Student favourites, Deliveroo’s #1 dessert maker and spin-off sister brand of Sheffield’s famous Bullion Chocolate, loaded-cookie bakers Doughboy are delivering dough-to-door deliciousness across the Sheffield scene.

Sheffield Hallam alumnus Max Scotford is well known across the city’s food scene for his inimitable craft chocolate brand Bullion, which prides itself on creating small-batch chocolate using the finest craftsmanship and artisanal expertise. But when the Bullion shop and café bar opened at Cutlery Works in Kelham Island, a whole new opportunity presented itself; the chance to create a spin-off brand of baked goods with the same commitment to quality and flavour that had put Bullion on the map.

And so Doughboy was born. Beginning as an inhouse bakery and wholesale provider to some of Sheffield’s favourite foodie hangouts – including Steamyard, Kommune and Lotte on the Edge – these cookie connoisseurs are now the city’s number one dessert provider on Deliveroo. Just like at Bullion, where all the sweet treats are taken from cocoa bean to finished bar by a small team of specialist creators, each bake at Doughboy is fresh, hand-made, and irresistibly delicious.

From the loaded cookies and tray bakes to the bars and cakes available for wholesale supply, every product raises the game for what desserts can mean – with every morsel overseen by expert pastry chef and chocolatier Louise Downs, whose culinary talents earned her the prestigious Top Young Pastry Chef award in 2016.

But at its (soft and gooey) centre, Doughboy comes from Max’s love of cooking, baking and sweet-treat making – a creative outlet which he might not have turned into the successful venture it is today without the support of Sheffield Hallam. From 2011-2014, Max studied events management with marketing at Hallam, and it was through the university’s Enterprise Team that he began to explore and set the mould for what Bullion would become.

That’s why we’re so proud to stock all our Kitchens and Cafes across campus with Doughboy’s bakes and cakes. Packed with the rich flavours of Bullion chocolate and available in a variety of flavours including peanut butter, Lotus Biscoff and Nutella, they’re the perfect pick-me-up after a long lecture or library sesh. And the fact that it all started here, at Hallam? That’s the sweetest detail of all.

Our Cow Molly 

Perched proudly on top of one of Sheffield’s seven hills is Our Cow Molly – a family-run dairy farm that’s been making deliveries to its loyal customers since 1947, when a bottle of milk cost the same as a loaf of bread and a pint of beer (but was still much more nutritious). 60 years later the farm is still going strong, providing a delicious range of dairy products to doorsteps, kitchens and cafes across the city.

The freshness of their offering is the first thing that sets Our Cow Molly apart from even their biggest competitors, with all deliveries going out just hours after the cows have been milked. And the fact that their product hasn’t been carted across the country and overly-processed is fundamental to the flavour; from their butters and milks to their irresistible ice-cream range, you can taste the goodness in every mouthful.

In every stage of their operation, Our Cow Molly support Sheffield at its core. Every penny made from the farm goes back into the local economy, whether through the support of their manufacturers – such as recycled-plastic bottle makers BlowPlast and label makers Crown Labels – or by providing fair living wages to their Sheffield-based staff and con-tractors.

Our Cow Molly milk is even the key ingredient of a number of local independent businesses, including Bouillon Chocolate, Just Preserves, and Sheffield Cheesemasters – three thriving companies spearheaded by stellar Sheffield Hallam Graduates.

If all this has got you working up a thirst, you won’t want to miss a visit to the Our Cow Molly farm up in Dungworth. Open to the public four days a week, the farm gives you the chance to visit the happy herd, learn more about how milk gets made, and even sample an ice cream (or two… or three). Don’t miss a visit to their new vending machines while you’re there – they were featured on Countryfile, so you know they’re worth the bus journey.

Roastology

Everything that Roastology do is about finding the perfect blend – from the taste profiles of their delicious coffee range, to their extensive vision for sustainability, responsibility and top quality products.

The Sheffield-based venture began in 2003, when Bryan Unkles and Andy McClatchey found themselves unsatisfied with the less-than-ethical sourcing of ingredients seen at many bigger companies. United by a drive for a fairer future, their ambition was to create a brand built on social responsibility, which sourced its produce directly from growers across Central and South America, and aimed to minimise environmental impact across every stage of its operation.

From Colombia to Kenya, Bryan and Andy have developed strong partnerships with farmers, cooperatives and organisations who, in turn, are passionate about the quality of the produce they provide. And these close relationships don’t only allow Roastology to keep a clear view of where every coffee bean, cocoa powder and packet of sugar comes from – they also help the team to understand the complex challenges that these manufacturers face, and provide opportunities for development and improvement across the production process.

As well as the care and consideration they take in building ties with their growers, they’re also committed to helping others closer to home. Their staff are employed on the basis of the best person for the job, regardless of race, sex, age, gender or religion, and are developed based on their existing skills to become highly-trained experts in the art of roasting, preparing and stellar service. And they do it all for their customers; from the care they take in designing new blends to the stringent quality checks at every stage of the process, Roastology are committed to achieving the highest standard in every cup.

In short, Roastology are striving to make coffee production the best it possibly can be – and they’re dedicated to spreading the word. All Roastology coffee is roasted right here in Sheffield, meaning its fresher and travels fewer miles. That’s why we’re so proud to stock only Roastology coffee across all our Kitchens and Cafés.

Roses the Bakers

From fresh crusty loaves to bouncy brioche buns, the people of Sheffield love a bit of bread – and they all know just where to go to get it.

Roses the Bakers was established in 1940 by James Rose, and is still a proudly-run family operation today, with James’s granddaughter Seuranie and her husband Mark Johnstone now leading a thriving team of around 60 bakers, confectioners, delivery staff and shop assistants. And while it may be a bigger operation now than at its inception over 80 years ago, the family feeling is still baked into the Roses business, with every individual driven by a shared goal: providing the best-quality breads, tarts, pies, pastries and treats for the people of Sheffield and beyond.

Just one look at the confections on offer in Roses is enough to convince you of the benefits of buying from an independent business who care so much about what they do. The breadcakes are beautifully soft, the cobs perfectly crusty. Stepping into any of their five outlets across the city is a foodie’s paradise. So it’s really no surprise that in 2020, Roses were named the Best Bakery in South Yorkshire at the National Bakery Awards.

So what makes Roses’ bakes so special? You might have guessed that it all comes down to freshness. The team take orders up until 3PM before beginning their prep work at the central bakery on Brightside Lane – mixing, shaping and creating to make every product perfect. The doughs are then moved to a retarder prover to slowly prove overnight, before the bakers arrive at 1.30AM to fire up the ovens. This slick operation means that most suppliers will get their requested batches when they’re still warm. Who could ask for more?

And where the people and businesses of Sheffield have happily supported this bountiful bakery over the years, Roses are proud to do the same in return.
